Snickerdoodles for Company Bake Sale

So I have officially been working in the corporate world for 2.5 weeks and we are having our annual bake sale to raise money to throw a Christmas party for under privileged children :)  I worked till 6 today and then commuted an hour home and still managed to whip up 4 dozen cookies for the bake sale tomorrow, phew!  I am still working on getting this recipe right, but here is the recipe I have been using: (adapted from Martha Stewart)

Ingredients:
3/4 cup butter
1/4 cup shortening
1 1/2 cups sugar
2 eggs
2 1/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon

Cinnamon Sugar:
3 tbsp. sugar
4 tsp. cinnamon
1 tsp. cardamom
Directions:
(1) Preheat oven to 400˚F. Cream butter, shortening, and sugar together until smooth. Add in the eggs one at a time and be sure to incorporate each egg thoroughly.

(2) In a separate bowl, combine flour, cream of tartar, baking soda, salt, nutmeg, and cinnamon.

(3) Slowly mix the dry ingredients into the wet, just until combined.  Do not over mix!

(4) Mix the cinnamon sugar mixture in a shallow bowl that will allow for easy coating.  Roll 1" dough balls into the cinnamon sugar mixture until completely coated. (These cookies tend to spread quite a bit so if you would like a puffier cookies, refrigerate the dough balls before baking)

(5) Bake for about 6-8 minutes, for small 1" dough balls (longer for larger cookies).  Cookies may not look done, but they most likely are!

Pandan Coconut Ice Cream

Pandan , have you ever heard of it? Growing up, I ate many sweets flavored with Pandan, although I didn't really learn what it was until my early 20s. It is a common flavor used in Southeast Asian desserts, similarly to how Vanilla is used in most American baked goods. If you have ever been into an Asian bakery and seen bright green cakes and such, that gorgeous green hue is attributable to Pandan. I ate many green desserts as a child but honestly never knew what that distinct flavor was and always just thought the green color was from food coloring to make things more exciting. However, in my adult years I started to see trendy Asian restaurants serving Pandan flavored desserts, and not until then did I realize I had been eating Pandan my whole life. My sister and I started to become obsessed with ordering beignets with pandan ice cream at one of our local sushi restaurants in Houston.
